Dear Reader,

Working in the food industry, as a baker and pastry chef, I learned things about food and kitchen tools I never imagined when I was growing up with food insecurity; and it changed the way I was able to feed myself and my family. Although I wanted to help other people feed themselves and their families better too; I was never quite sure of the how or why. Then the pandemic hit and I watched, stricken, as people panicked and hoarded food. I witnessed people like myself who had grown up, or were currently, food insecure see their worst nightmare realized, no food and no where to get more.

What struck me most was the panic over lack of yeast, commercial yeast was swept from the shelf with gusto as if it hadn't arrived on the scene a mere 5 generations ago. I was shocked as I watched social media explode with "How do I make bread without yeast?" posts. I realized I knew something we as a community had collectively forgotten; water, potatoes and flour have been the cornerstones of bread making for centuries. I watched over the next year as the internet flooded with wild yeast starter recipes and techniques; most of them complicated, wasteful, expensive and generally of little help to anyone actually plagued with food insecurity.

Here suddenly and unexpectedly was my "why", so I got to work on the "how". I started baking immediately and read everything I could find on wild yeasts, flour and the histories of potatoes and bread. I pooled that with all my knowledge of commercial bread production, recipe development and food insecurity; five years later this is the result. I've created something I deeply hope will help you feed yourself, those you love, and anyone else you feel like feeding in an affordable, accessible, and attainable way.

Too often knowledge like this is glamorized, monetized and held aloft as too complicated or expensive for the typical person in a typical kitchen. It’s simply not true and what’s more, this knowledge; it belongs to you, to everyone. That's why this site is and will always be maintained as an independent, free informational site for any and all who may need it as a resource. Bread is as much the key to food security now as it has ever been throughout centuries of human history; my hope is that this site hands you that key.
