It's common when learning something new and expansive to have a lot o questions along the way. This is the how and why section to help make sense of all the seemingly complex details of bread making. Rest assured you will stretch and grow just as does your bread dough, and before you know it, you will know all you knead to know. Please note that the information you find here is generally true for all bread, sourdough or otherwise, and for all starters that are more liquid than solid in nature, not just the recipes you find on this site.

My driving need for creating this method is based in growing up food insecure, as do so many people in our country. It was important to me that at it's core this process not only made sense for the people growing up today like I did, but for it to make practical financial "cents".

I wanted to keep the ingredient list short, shelf stable and above all affordable, which is why this method and it's recipes were designed using generic brands or the least expensive brands available. In our "Ingredient Adjustments or Exclusions" section you will find information regarding how your bread will change from substituting with what you have on hand or from leaving out ingredients altogether. Below is a list of all the ingredients you will need to complete all the recipes on this website.

Starter ingredients:

  • These items will only be needed once, in these amounts, to create your starter.
  • 1 tsp Distilled White Vinegar (5%)
  • 1 Small potato

Key ingredients:

  • These items will be needed, in varying amounts, to make all recipes
  • Unbleached Bread Flour
  • Unbleached All Purpose Flour (AP Flour)
  • Table Salt
  • Vegtable Oil

Optional ingredients:

  • These items are in many recipes but can be completely left out if unavailable to you.
  • Granulated Sugar
  • Brown Sugar
  • Potato flakes
  • Dry Milk Powder

Additional ingredients:

  • These items are used and will only be needed for a few specific recipes.
  • Wheat Flour
  • Cornmeal
  • Oats
  • Cinnamon
